Non-Dairy Potato Soup

I'm planning to try this non-dairy potato soup.  Dairy was the only thing holding me back from enjoying potato soup.  Having discovered how good mashed cauliflower is when used as "mashed potatoes," I think this soup will be a winner.  It's from Serene's House of Yumm!  Me, I'd leave off the bacon and cheddar and maybe add some chopped green onions.
